Following a unique process, half of the grapes ferment in 300 year old underground clay vessels, a technique that keeps ancient traditions alive. The wine spends four months on its skins, developing a deep golden hue and a rich, tannic structure. With no initial sulfite additions and native yeast fermentation, it offers natural complexity.
