The vines grow on a mix of clay, limestone and slate, giving the wine a clear mountain character. The grapes are pressed as whole bunches and fermented in clay amphora, a vessel that keeps the wine close to its fruit and texture without adding wood flavour. It is made by the ancestral method: the wine is bottled
